Frosted Lemon Cookies

Ingredients
- 2 eggs
- 2 1/2cups all purpose flour
- 1 cup unsalted butter
- 1 1/2 cups sugar
- 1 tablespoon grated lemon peel
- 1 tablespoon lemon juice
- 1 1/2 teaspoons cream of tarter
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Glaze
- 2 1/2 cups powered sugar
- 1/4 to 1/2 cup lemon juice
Directions
- Heat oven to 400ºF. Combine all cookie ingrdients in large bowl. Beat at low speed, scraping bowl often, until well mixed.
- Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
- Bake 6 to 8 minutes or until the edges are slightly brown. They bake fast so take care not to overbake.
- Meanwhile, combine the glaze ingredients to a spreadable frosting.Frost the cookies while still warm. If desired, sprinkle lemon rind on the frosting.
For a variety, add a half walnut on each cookie before baking.
These are thin, crispy, and chewy. Very refreshing
