Frosted Lemon Cookies

Ingredients

  • 2 eggs
  • 2 1/2cups all purpose flour
  • 1 cup unsalted butter
  • 1 1/2 cups sugar
  • 1 tablespoon grated lemon peel
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons cream of tarter
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

    Glaze

  • 2 1/2 cups powered sugar
  • 1/4 to 1/2 cup lemon juice

Directions
  1. Heat oven to 400ºF. Combine all cookie ingrdients in large bowl. Beat at low speed, scraping bowl often, until well mixed.
  2. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
  3. Bake 6 to 8 minutes or until the edges are slightly brown. They bake fast so take care not to overbake.
  4. Meanwhile, combine the glaze ingredients to a spreadable frosting.Frost the cookies while still warm. If desired, sprinkle lemon rind on the frosting.
    For a variety, add a half walnut on each cookie before baking.

These are thin, crispy, and chewy. Very refreshing
